Z Bread

 I had two left-over zucchinis from our farm-stand hall the weekend before last.  This time of year, it's easy to over-buy them.  They were cheap and they were tasty -- but it wasn't possible to eat four in a week.  What is a girl to do? Of course, make zucchini bread.  One batch was made in a baking dish, the other was in a loaf pan.  We've enjoyed the baking dish version all week.  It's  breakfast, desert, and snack. No guilt either as I made it with oatmeal and whole wheat flour.  It's been yummy.

Doubling the recipe called for eight eggs, but I just used seven.  You can't tell that I shorted it.  Teddy had already enjoyed a couple of egg shells Sunday morning when I baked this, so I rinsed these and they're in the fridge.  She'll get a crunchy treat or two each day for the rest of the week.  These are cheap, low calorie, healthy dog treats. I know most dogs wouldn't eat them,  but that is the charm of Teddy. She eats anything. We waste almost nothing.

As for her veggie needs, this week I made up a batch using a frozen "California" medley (broccoli, cauliflower, carrots) and frozen peaches from Dollar Tree.  To help it along, I added the dregs from a carton of orange juice, along with a good shot of olive/safflower oil blend.  I am doing a good job of not over-buying produce, so we're making her nightly snack with frozen fruit/veggies.  I reckon I spend about $2.50 per week on that.  Of course, she gets scraps and other extras -- but this is the basis of her diet; two meat/bone meals, one veggie meal, plus a banana at lunch.  She's not complaining and neither am I.
